Bircher Muesli

This is one of my favourites breakfasts. It’s big, sweet and ready to eat in the morning. Perfect for when you are in a rush!

I was born in Switzerland and my mother used to prepare this dish very often. We would have it for breakfast on its own or spread on bread and butter (I know, not so healthy anymore, eh?). Bircher-Muesli was created by Doctor Maximilian Bircher-Brenner, to know more about it follow this link.

It is a similar concept to the classic slimming world ‘Overnight Oats’, but I think that the grated apple and lemon really exalts the flavour.

The portion is big and makes your healthy extra B choice go that extra mile. I couldn’t eat it on one go and had it later as a filling free snack.

 

Bircher Muesli

Serves 1

Syn per serving: Free if using the oats as your HEB

 

Ingredients

1/2 pot Muller Light Vanilla Yoghurt (or any other free yoghurt)

3 tbsp of Natural Fat-Free Yoghurt

A little bit of lemon juice

2  Organic Apples

1 Banana

4-5 Strawberries

 

Method

Put the oats and yoghurt in a bowl and mix.

Grate the apples with the skin on and add them to the mixture. Squeeze in some lemon juice, it will prevent the apples from going brown.

To finish cut the fruit, add it to the bowl and mix carefully. Put your muesli in a Tupperware and leave overnight. Remember to give it a good mix before eating it.

You can add as much yoghurt or fruit as you fancy.
