
Last Sunday, we went to a big garden centre, with a lovely cafe. I usually have a jacket potato (no butter!!) with baked beans. But to be honest I don’t really like it. Therefore, this time I decided to bring my own filling and I made this delicious and quick Coronation Chicken, for just 3 syns.
I used some leftover chicken, but if you don’t have it just boil 2 chicken breasts for about 10 minutes (make sure they are cooked through). Then cut them into bite-size pieces.
Quick Coronation Chicken

Ingredients
Shredded chicken from a pre-roasted chicken
2 tbsp Lighter than light Mayonnaise
100g Fat-Free Fromage Fraise
1 tsp Curry Powder (or more if you like)
1/2 tsp Cinnamon
12g Raisins
Black Pepper
Method
Mix the mayonnaise, yoghurt, cinnamon, curry powder and raisins and season to taste. Adjust the quantities based on your personal preferences, except for the mayo and raisins, as they contain syns!
Add the shredded chicken and black pepper, mix well.
Your backed potato topping is ready 😀
