This refreshing salad is perfect to add some speed to a light summer meal. It’s so simple to make, yet delicious. I didn’t even have to tweak it, as it is Slimming World friendly in its original form 🙂
It goes without saying that the taste depends mainly on the quality of the Tomatoes.

Ingredients
10-15 Cherry Tomatoes
1/2 Red Onion, sliced
7-8 Fresh Basil Leaves, chopped
Juice of 1/2 Lemon
Freshly grounded Black Pepper
Salt
Method
To make the salad cut the tomatoes in halves or quarters and put them in a bowl. Add the onion and basil. Dress with the lemon juice and season with a generous amount of Black pepper and salt to taste.
